Systematic Carbon Chemistry

This page covers the fundamental concepts of saturated vs unsaturated compounds in higher chemistry.

Key points:

  • Saturated compounds contain single carbon-carbon bonds
  • Unsaturated compounds have at least one carbon-carbon double bond
  • Bromine water is used to distinguish between saturated and unsaturated compounds
  • Factors affecting solubility and boiling point are discussed

Definition: Saturated compounds are molecules with only single bonds between carbon atoms, while unsaturated compounds contain at least one double or triple bond between carbon atoms.

Example: Unsaturated compounds quickly decolorize bromine water from orange to colorless, while saturated compounds do not.

Vocabulary: Isomers are compounds with the same molecular formula but different structural formulae.

Alcohols

This page focuses on the properties and types of alcohols, which are important Higher Chemistry functional groups.

Key points:

  • Alcohols contain a hydroxyl OH-OH functional group
  • They are polar molecules capable of hydrogen bonding
  • Alcohols are soluble in water and have high melting and boiling points
  • Types of alcohols: primary, secondary, and tertiary

Definition: Alcohols are organic compounds containing a hydroxyl OH-OH group attached to a carbon atom.

Example: Ethanol CH3CH2OHCH₃CH₂OH is a primary alcohol commonly found in alcoholic beverages.

Highlight: The ability of alcohols to form hydrogen bonds contributes to their unique properties, such as higher boiling points compared to alkanes of similar molecular mass.

Carboxylic Acids

This page discusses the properties and reactions of carboxylic acids, another important class of organic compounds.

Key points:

  • Carboxylic acids contain a carboxyl COOH-COOH functional group
  • They are polar molecules capable of hydrogen bonding
  • Carboxylic acids are soluble in water and react with metal oxides, hydroxides, and carbonates

Vocabulary: The carboxyl group COOH-COOH is the functional group that defines carboxylic acids.

Example: Vinegar is an aqueous solution of ethanoic acid CH3COOHCH₃COOH.

Highlight: When carboxylic acids react with bases, they form salts with names ending in "-anoate".

Esters

This page covers the formation, properties, and uses of esters, which are derived from alcohols and carboxylic acids.

Key points:

  • Esters contain an ester link functional group
  • They are formed by reacting an alcohol with a carboxylic acid
  • Esters are used as flavoring agents and industrial solvents
  • The formation of esters is a condensation reaction, while their breakdown is hydrolysis

Definition: Esters are organic compounds formed by the reaction between an alcohol and a carboxylic acid, characterized by the ester link functional group.

Example: Methyl ethanoate can be formed by reacting methanol with ethanoic acid.

Highlight: The process of making esters in the lab involves using sulfuric acid as a catalyst and a water bath for heating, as the mixture is flammable.

Fats and Oils

This page discusses the structure, properties, and importance of fats and oils in chemistry and biology.

Key points:

  • Fats and oils are concentrated energy sources and essential for vitamin transport
  • They are non-polar molecules with different melting points
  • Fats and oils are naturally occurring esters made from glycerol and fatty acids
  • Fats are saturated, while oils are unsaturated

Definition: Fats and oils are triglycerides, consisting of three fatty acid molecules attached to a glycerol backbone through ester bonds.

Example: The systematic name for glycerol is propan-1,2,3-triol.

Highlight: Oils can be hardened by reacting with hydrogen over a nickel catalyst, making them more saturated and solid at room temperature.

Soaps and Detergents

This page explains the chemistry behind soaps and detergents, including their structure, function, and production.

Key points:

  • Soaps are water-soluble salts of fatty acids
  • Alkaline hydrolysis is used to produce soaps from edible fats or oils
  • Soap molecules have a polar, hydrophilic head and a non-polar, hydrophobic tail
  • The cleaning action of soaps is explained step-by-step
  • Hard water can cause problems with soap effectiveness
  • Soapless detergents are an alternative to traditional soaps

Definition: Soaps are water-soluble salts of fatty acids, typically produced by the alkaline hydrolysis of fats or oils.

Example: The structure of a soap molecule includes a carboxylate head COONa+COO⁻Na⁺ and a long hydrocarbon tail.

Highlight: Soapless detergents contain a sulfonate ion instead of a carboxylate ion, making them more effective in hard water.

Emulsions

This page introduces the concept of emulsions, which are mixtures of two immiscible liquids.

Key points:

  • Emulsions contain small droplets of one liquid dispersed in another immiscible liquid

Definition: An emulsion is a mixture of two or more liquids that are normally immiscible, where one liquid is dispersed in the other as small droplets.

Example: Milk is an example of a natural emulsion, where fat globules are dispersed in water.
