Osnove polisaharida
Zamisli polisaharide kao dugačke ogrlice napravljene od perli šećera - svaka perla je monosaharid, a cela ogrlica je polimer. Njihova opšta formula je , gde je ogroman broj!
Najvažnija stvar koju treba da zapamtiš je razlika između glikozidnih veza. Kod α-glikozidne veze, -OH grupa na C1 atomu glukoze je usmerena nadole, dok je kod β-glikozidne veze usmerena nagore.
Ova mala razlika u vezama pravi ogromnu razliku u funkciji! α-veze stvaraju spiralne strukture idealne za skladištenje energije, dok β-veze grade ravne, čvrste lance perfektne za strukturu.
Zapamti: Tip glikozidne veze (α ili β) određuje da li će polisaharid biti "magacin" za energiju ili "građevinski materijal"!
Skrob - energetska štedna knjižica biljaka
Skrob je kao biljni "rezervni fond" energije - nalaze ga u krompiru, žitaricama i svugde gde biljka čuva energiju za teška vremena. Sastoji se od α-D-glukoze povezane α-vezama.
Skrob je zapravo mešavina dva različita polimera. Amiloza (20-30%) je jednostavan, nerazgranat lanac koji se uvija u spiralu zbog α-1,4 veza. Amilopektin (70-80%) je razgranat kao drvo - osnovni lanac ima α-1,4 veze, a grananje se dešava preko α-1,6 veza na svakih 24-30 ostataka glukoze.
Kad hoćeš da dokažeš prisustvo skroba, koristi jodnu probu! Amiloza sa jodom daje intenzivno plavu boju jer se molekuli joda "sakriju" u njenu spiralnu strukturu.
Test trik: Plava boja sa jodom = skrob je prisutan!
Glikogen - životinjski turbo rezervoar
Glikogen je kao "životinjski skrob", samo mnogo pametniji dizajn! Građen je od α-D-glukoze, baš kao skrob, ali je struktura mnogo razgranatija - grananje se dešava na svakih 8-12 ostataka glukoze.
Najveće količine glikogena nalazimo u jetri (reguliše nivo šećera u krvi) i mišićima (brza energija za kontrakciju). Zašto je toliko razgranat? Zato što životinje trebaju energiju BRZO - što više krajeva lanca, to više enzima može istovremeno da "grize" i oslobađa glukozu!
Sa jodnom probom glikogen daje crvenosmeđu boju, što je lako razlikovati od plave boje skroba.
Logika prirode: Više grananja = brži pristup energiji = preživljavanje!
Celuloza - prirodni armiraniček
Celuloza je najrasprostranjeniji organski molekul na planeti i glavna je "građevinska" komponenta biljaka. Za razliku od skroba i glikogena, pravi se od β-D-glukoze povezane β-1,4 vezama.
Ključna razlika je u strukturi: zbog β-veza, svaki drugi molekul glukoze je rotiran za 180°, što pravi potpuno prave lance umesto spirala. Više paralelnih lanaca se povezuje vodoničnim vezama u mikrofibrile - to joj daje neverovatnu čvrstoću!
Ljudi ne mogu da vare celulozu jer nemamo enzim celulazu. Za nas je celuloza "dijetetsko vlakno" koje pomaže varenju. Sa jodnom probom ne daje nikakvu promenu boje.
Zanimljivost: Pamuk je skoro 100% celuloza - zato je tako čvrst i izdržljiv!
