Understanding Fat Structure and Types

Your body treats fats as one of the most important macronutrients, right alongside carbohydrates and proteins. The clever thing about fats is that they're only called "fats" when they're solid at room temperature - think butter or lard. When they're liquid at room temperature, like olive oil, we call them oils instead.

The chemical structure of all fats is surprisingly simple. Every fat molecule is made from one glycerol backbone attached to three fatty acid chains. This complete structure gets the fancy name triglyceride - remember this term because it'll definitely pop up in your exams.

Saturated fatty acids come mainly from animal sources and stay solid at room temperature. Butter, ghee, and lard are perfect examples. Unsaturated fatty acids, on the other hand, usually come from plants and remain liquid at room temperature, like sunflower oil or rapeseed oil.
