Starch, Glycogen & Cellulose

Starch is basically a plant's energy savings account - when glucose is abundant, plants convert it into starch for later use. What makes starch brilliant is that it's completely insoluble, which means it won't mess about with the cell's water balance and cause it to burst.

Starch actually consists of two different molecules. Amylose makes up 10-30% of starch and forms a compact helix shape through 1,4 glycosidic bonds - think of it like a tightly wound spring that's hard for enzymes to break down quickly. Amylopectin, on the other hand, makes up 70-90% of starch and has branches every 20 glucose units thanks to additional 1,6 glycosidic bonds.

Glycogen is essentially the animal version of starch, stored mainly in your liver. When your body needs energy, hormones trigger the breakdown of glycogen back into glucose for cellular respiration. Glycogen is even more branched than amylopectin, making it perfect for rapid energy release when you need it most.

Cellulose is completely different - it's made from β-glucose and forms incredibly strong chains that create microfibrils. These tough fibres give plant cell walls their structural support, which is why plants can grow tall and maintain their shape without a skeleton like animals have.
